Southwest Baked Pacific Ocean Perch Tacos

INGREDIENTS
1 package 10oz Orca Bay Ocean Perch Fillets (thawed)
vegetable oil or pan spray
chili rub/seasoning as needed (pick up your fave!)
Avocado Jalapeño Salsa
1 large ripe avocado, diced
2 small roma tomatoes, diced
1 tablespoon minced pickled jalapeno
2 tablespoons chopped fresh cilantro
1 tablespoon minced red onion
1 tablespoon fresh lime juice
1 lime, juiced (about 2 tablespoon)
1/4 teaspoon salt
Cooking Instructions
Step 1
Combine all ingredients for the avocado jalapeño salsa and set aside until ready to serve.
Step 2
Preheat oven to 400° F. Lightly oil or pan spray an oven proof baking dish. Season the perch fillets with your favorite chili rub/seasoning and arrange in the baking dish.
Step 3
Bake in preheated oven for about 12 - 15 minutes* until the fish is cooked through. Transfer to a serving dish, top with the avocado jalapeño salsa and enjoy!
*The cooking time is estimated and will vary depending on the thickness of the fish and the performance of your oven.
Chef’s Tip’s:
• This dish is an excellent twist to Taco Tuesday! Serve with warm tortillas, and lime wedges.
• Make a taco salad, and serve the Perch on top of crisp lettuce with crumbled cotija cheese.
