Sockeye Salmon with Tomato Basil Salad

The Sweet Tomato Basil Vinaigrette is also delicious with grilled Alaska Halibut.
Serve with roasted garlic mashed potatoes and fresh summer corn.
INGREDIENTS
1 package Orca Bay Sockeye fillets (THAWED)
vegetable oil or pan spray
salt and black pepper, to taste
Sweet Tomato Basil Vinaigrette
1 cup grape or cherry tomatoes, cut in 1/2
6 to 8 fresh basil leaves, torn
1 1/2 tablespoons chopped capers, drained
1 teaspoon minced garlic
1/2 lemon, zested and juiced
2 teaspoons Dijon mustard
2 tablespoons olive oil
3/4 teaspoon salt
1/4 teaspoon fresh cracked black pepper
Cooking Instructions
Step 1
Combine all ingredients for the sweet tomato basil vinaigrette and set aside until ready to serve.
Step 2
Preheat the BBQ grill. Lightly oil the fish fillets and season with salt and pepper. Place fish on a hot grill, skin side up; cook on each side for about 3 - 4 minutes*.
Step 3
Transfer to a serving dish, top with the Sweet tomato Basil Vinaigrette and enjoy!
