Sesame Crusted Keta Salmon

INGREDIENTS
1 package 10oz Orca Bay Keta Salmon Fillets (thawed)
vegetable oil or pan spray
salt and pepper, to taste
Sesame Crust
1 tablespoon black sesame seeds
1 tablespoon white sesame seeds
Thai Peanut Sauce
2 tablespoons soy sauce
1/4 cup rice wine vinegar
3/4 cup crunchy style peanut butter
1/4 cup coconut milk
1 tablespoon minced garlic
1 tablespoon fish sauce (optional)
pinch crushed red chili flake
1/2 teaspoon dry ginger
2 tablespoons honey
1/2 cup water
Cooking Instructions
Step 1
Place all ingredients for the peanut sauce into a small sauce pan, cook on medium-low heat, stirring until just simmering. Keep warm until ready to use.
Step 2
Preheat oven to 400° F. Lightly oil or pan spray an oven proof baking dish. Arrange the keta fillets in the pan, and season with salt and pepper. Season each salmon fillet with salt and pepper. Mix sesame seeds together on a large plate and lightly press top side of each filet into the seeds. Place in the prepared plan, seed side up.
Step 3
Bake in preheated oven for about 15-20 minutes* until the fish is cooked through. Transfer to a serving dish and serve with warm peanut sauce!
*The cooking time is estimate and will vary depending on the thickness of the fish and the performance of your oven.
Chef’s Tips:
• This is also an excellent sauce for Ahi Tuna or Halibut.
• Serve with sautéed spinach and jasmine rice.
• You can also purchase your favorite peanut sauce for a quick option.
