Piccata Bread Crumb Crusted Alaska Cod

INGREDIENTS
1 package 10oz Orca Bay Cod Fillets (thawed)
vegetable oil or pan spray
salt and pepper, to taste
Piccata Bread Crumbs
2 tablespoons mayonnaise
1 tablespoon minced garlic
1/2 cup panko bread crumbs
1/2 lemon, juiced
4 tablespoons salted butter, melted
1 tablespoon chopped parsley
2 tablespoons chopped capers, drained
2 tablespoons Dijon mustard
Cooking Instructions
Step 1
Combine all ingredients for the piccata bread crumbs and set aside until ready to use.
Step 2
Preheat oven to 400° F. Lightly oil or pan spray an oven proof baking dish. Arrange the cod fillets in the pan, and season with salt and pepper. Lightly press about 3 tablespoons of piccata bread crumbs onto each fillet, dividing evenly.
Step 3
Bake in preheated oven for about 15-20 minutes* until the fish is cooked through and the bread crumbs are lightly browned. Transfer to a serving dish and enjoy!
*The cooking time is estimated and will vary depending on the thickness of the fish and the performance of your oven.
Chef’s Tips:
• Serve with lemon wedges and a grilled or roasted zucchini, or on a bed of Alfredo pasta.
• The piccata butter bread crumbs are also delicious on Alaska halibut.
