Curry Rubbed Tuna with Mango Salsa

Chef’s Tips:
If you like it sweet and spicy, add a touch of sweet Thai chili sauce or Sriracha to the salsa.
Serve with roasted potatoes or on top of fresh greens.
INGREDIENTS
1 package 10oz Orca Bay Tuna steaks (thawed)
vegetable oil or pan spray
Curry Rub
1 tablespoon curry powder
1 teaspoon salt
1 1/2 teaspoons brown sugar
Mango Salsa
1/2 cup diced fresh mango
1 tablespoon chopped fresh cilantro
1/2 lemon, juiced (about 1 tablespoon)
1/2 a fresh jalapeno, minced (or substitute chopped pickled jalapeno)
2 tablespoons sliced red onion
1 tablespoons olive oil
1/4 teaspoon salt
pinch crushed red chili flakes
Cooking Instructions
Step 1
Mix together all the ingredients for the curry rub and set aside.
Step 2
Combine all ingredients for the mango salsa and set aside until ready to serve.
Step 3
Preheat a 10-inch non-stick skillet drizzled with vegetable oil over medium-high heat until hot. Place the seasoned tuna into the hot pan – cook for about 3 - minutes* on each side.
Step 4
Transfer to a serving dish, top with the mango salsa and enjoy!
