Baked Flounder with Spinach Almond Pesto

INGREDIENTS
1 package 10oz Orca Bay Flounder Fillets (thawed)
vegetable oil or pan spray
salt and pepper, to taste
Spinach Almond Basil Pesto
1 1/2 teaspoons minced garlic
1/2 cup packed fresh spinach leaves
2 tablespoons sliced or slivered almonds
1/4 cup grated parmesan cheese
2 tablespoons extra virgin olive oil
1 lemon, juiced (about 2 tablespoons)
1/4 teaspoon salt
Cooking Instructions
Step 1
Place all the ingredients for the spinach almond basil pesto into a food processor and process until almost smooth. Refrigerate until ready to use.
Step 2
Preheat oven to 400° F. Lightly oil or pan spray an oven proof baking dish. Arrange the Flounder fillets in the pan, and season with salt and pepper. Spread about 2 -- 3 tablespoons of the pesto on each filet, to cover well.
Step 3
Bake in preheated oven for about 12 - 15 minutes* until the fish is cooked through. Transfer to a serving dish and enjoy!
*The cooking time is estimate and will vary depending on the thickness of the fish and the performance of your oven.
Chef’s Tips:
• This is also an excellent topping for Alaskan Halibut or Sockeye Salmon.
• Prep the pesto the day before for a quick and easy dinner solution.
• Serve on a bed of buttered orzo pasta or with a tomato and onion salad.
