
Ingredients
- 2 cups Orca Bay Cod, Pollock, Perch, Flounder, Halibut, Mahi, or Salmon - thawed and finely chopped
- 2 to 3 tablespoons green onion, chopped
- 2 tablespoons parsley, chopped
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon cayenne or old bay seasoning
- 2 large eggs
- 1/3 to 1/2 cup panko or freshly toasted bread crumbs
- Cooking oil (olive, vegetable, canola)
Instructions
Combine fish, green onion, parsley, eggs, and bread crumbs in a large bowl; mix well. Scoop out large heaping tablespoons and form into balls. Place on a sheet pan about 1 inch apart. Use a plate or another sheet pan to slightly flatten into cakes. Heat cooking oil in pan on medium-high heat. Pan fry cakes until golden about 2 minutes a side.
